I know...I know...I've been AWOL for a while, but I promise I never stopped smoking, only fell off the communication grid.

I recently learned how to stone sharpen my knives and I'm thrilled!  Mine are carbon steel so can't be put in an electric sharpener.  I use to have to take them in and have them done for $40 a pop!!!!

A Bob Kramer rep came out and taught me how and the results are fantastic.  For anyone that was scared to try to stone sharpen their own knives (especially the expensive ones) give it a try, I highly recommend it!

Yes, get a good quality tri-stone with a stable base.  The key things are:

Always cut forwards into the stone (lead with the edge as if you are (with light pressure) trying to cut into the stone.

Keep a precise and consistent angle with each swipe. You can use your fingers on the trailing edge to help maintain a constant angle.

When using the fine stone, use it wet and not dry. Many people use mineral oil; depending on the stone, water may work well too (Washita).

Avoid steep angles, they make a chisel edge which does not cut as well (but tend to be more durable). An angle of 10-15 degrees is about right for "most" knives. 
 
It really is.  Practice on your "throwaway knives" first.  Bob Kramer recommends a 12 degree angle which does great for me.  I've been super happy with my results so far.
 
Go to youtube and search "Sharpie trick" for sharpening knives.

It will improve your sharpening skills.

I have a tri-stone setup I got probably 30 years ago, and have been an 'old school' guy forever.  A few weeks age I was wandering through the local Gander Mtn store and saw one of those Smith knife sharpener kits on sale, so picked it up.  I have to say, I was really impressed with how easy it was to use, and how fast it was.  I went through all of my Henckel kitchen blades (which were a real mess) in about 20 minutes, and they came out really good.

I'll probably stay old school on my good hunting blades, but I left the kit right in the kitchen for next time.
 
The new Diamond grit stones, put an edge on that is for finishing super sharp. Don't forget a good steel will maintain the edge.

Glad to see others out there are still stone sharpening. I still use one of the Dexter Russell tri-stone sharpeners from my grandfather's processing plant/butcher shop quite regularly. All you need is that and a good steel and you'll never have to worry about dull knives again.

I agree Tuesday!  I'm having so much fun with it...I'm sharpening anything I can find.  I did my son's hunting  knives, pocket knife, the kitchen steak knives...LOL

Has anyone ever tried the "Spyderco Tri-Angle Sharpmaker Knife Sharpener 204MF"?


I would love to be able to sharpen a knife wusing a stone.  I've tried and was not happy with the results.  This Spyderco works pretty well.  I still can' put papper as easily as I would like when done but my knives are sharper after I use this thing.

Any comments?

The set I got had three stones 400, 1000, 5000 with a sink bridge holder. It was $299, but since I was paying $40 a knife to have them done, I decided it was worth it.
