Stick Time Again

Using up the rest of the Willies mix.
Got 5 pounds of ground beef 80/20
Have to mix by hand as I gave my 7qt KA away.

Willies stick mix with 1 level tsp cure 1

Very cold distilled water into the mix.

Mix as good as you can by hand. If your going to add any cure accelerator (Sodium Erythorbate) do so now.

Cover and fridge. I will mix again in 7 hours.

It rained non stop for 27 hours with the TS we had on us. This morning its raining again.
Had to move some stuff under the gazebo and put the PB Vert in there.

Its a 10x12 gazebo secured fast to the concrete.
Weather looks to be clearing now.

Not had my sticks done this fast in a dawgs age.
Vertical at 150. IT of sticks 153 at 152p.

Cover with a couple clean towels till they cool then brown bag and fridge.

A friend of ours moved to this resort with us from the other place. We are right next to him and his wife. He likes the willies so these are going to him

I cut both ends off.

Figures out of vac bags again.

If my wife has a knee replacement she wants to go to New Holland Lancaster county to visit her aunt for a couple weeks. I may drive her there then drive back.
