This reverse flow stainless steel smoker/grill was designed for the serious chef. The trailer has 3 post-jacks for 3-point leveling. The front jack and receiver are removable for shin protection and to make the smoker difficult for non-owners to move. The firebox is brick-lined inside a steel jacket and provides two options, i.e. burning wood on a grate or using the raceway with charcoal and wood chips. The raceway is lit up on one end and provides hours of heat and smoke as the charcoal burns around the track. There is a damper on the front side of the smoker that provides draft control for the reverse flow smoke path and one on the firebox door that feeds the fire. Both cooking grates are easily lifted out for cleaning. The firebox also has a damper that allows the cook to throttle smoke and heat flowing up through the grilling side. The grill side cover lifts easily on greaseable hinges and rests safely on stops behind. The grate on the smoker side rolls smoothly out toward the cook. Water and whatever else you use can be then be added behind the grate. The water reservoir has valves to skim and to drain. There is a work table on the back that has brackets for a large umbrella and a large stainless steel drawer for cooking tools. Temperature gauges glow in the dark. There is a warming table behind and above the firebox. The undercarriage was built very strong and provides a couple of areas to store firewood. The tires look new. You gotta see it to believe it.
