I got a new pellet grill a while back, made hamburgs, hotdogs, chicken, pizza, deer steaks on it over the past weeks, everything came out good and I was off work today so I wanted to try some smoked st. louis ribs so I can compare them to my mes 30, started with a little mustard and my Memphis style rub, put in fridge over night, into smoker this morning and set it at 180 degrees so I would get the most smoke out of it, after 5 hours put temp to 225 for 2 hours pulled out and let rest until tomorrow for the games, I try to smoke everything the day before because I think it taste better when it sits for a day or two. BUT I had to try them, right now i'm getting a light smoke taste (as I was told I would with pellet smoker) but I will update on the verdict of pellet verses mes 30 with amnps Saturday to be fair to the pellet smoker. well the verdict is in, there was a lighter smokey flavor then the mes 30 with the amnps,(my opinion) but the smoke flavor was there but not as much as I like. I will have to get a pellet tube and see if that increases the smoke. I will also try hickory pellets they might help increase the smoke flavor. Plus I always have the mes. stay tuned for episode 2 coming in the near future. This testing is going to be hell:emoji_wink:
 
You could also use the “smoke” setting on your pellet smoker, if its like mine there is a small knob that adjusts the auger on/off cycle to your level of preferred smoke. Then crank up the temp to finish.

I don't think mine has the smoke setting, there is a smoke stting but I don't think it's adjustable. but i'll have to double check. I have the pb1000t2
