Put mustard on as a “glue” and added a rub.

Smoked for 3 hours at 250F with maple wood chips. Went a little higher than normal given the wind. The smoker was on most of the 3 hours keeping temperature up. While the air temp is around freezing, the wind chill takes temp down into the teens F.

Tender with a good chew and TASTY!

Good looking ribs.

I saw this yesterday and got inspired knowing how much warmer today was going to be and had a rack in the freezer I took out last night.
