Philly 'burbs.
I woke up today realizing the entire family will be gone for most of the day and that of course led me to the decision to smoke something for the family when they get back. I needed some stuff that wouldn't take 22 hours like my last brisket did and could be done for dinner when they get back.

I took a trip to BJ's thinking I would do a rack of spares and maybe a turkey breast if they had one. Well, they only had one pack of spares and I realized my mom-in-law doesn't do pork, so hmmm, what to choose? I ended up with a pack of beef short ribs, a boneless lamb leg and a pair of little cornish game hens. 

Having no time to brine the birds or do overnights with the rest I simply rubbed them down with my own rub and stuck them in the Smokin-it #2 I picked up recently. I tossed in a lump of hickory and turned it to 225. I have probes in the lamp and one of the hens. I have the hen set for 170 and the lamb at 140. Decent numbers? The ribs I will do by time and eye.

Hey, if they come out just "eh" they will still be good and if they do better than that, I will be stoked. If they are a total waste, take out Chinese! All bases are covered!

I'll check in later to let everyone know how they came out.

Sounds like a good start and 170 for the hen's & 140 for the lamb is good. Just rest them for 15 minutes or so before cutting them up.

You'll love the "Baby Birds" they are awesome and so are the short ribs (next time get long bones short ribs) and the lamb will be good to. So smoke n enjoy the food and don't forget your buddies out here in smokey smokeland. Q-view please
