Spitzmur Recipes

I need a recipe for Spitzmur, a Norwegian dry cured beef sausage.
This rather big-size recipe is from my Norwegian South Dakota uncle. He made a lot of spizmur over the decades. He even had difficulty spelling spitzmur.

I like seeing old hand written recipes like that even though I've never heard of spitzmur before...
 
I come from Norwegian & Swedish ancestry. New heard of Spitzmur.

Is that a "Christmas" type of sausage? If so, there are several Norwegian Christmas sausage recipes out there.

Could be; although I've never heard of it referred to as such.
Looks like the ingredients are similar. Sounds good to me to call Spitzmur a year-round dried Christmas treat.
 
Like the recipe. But where would you even get salt peter anymore? :emoji_wink:
