Threw together this simple salad tonight but the real star is the dressing. Salad is baby spinach, red onion, hard boiled eggs , sautéed mushrooms, crumbled bacon and pan fried chicken tenders. I prefer the mushrooms cooked some for salad. I like the flavor and texture better. The dressing is a warm bacon dressing. Bacon Dressing
▢ 1/2 cup Bacon grease
▢ 2 tablespoons Shallot (finely chopped, optional)
▢ 2 teaspoons Garlic powder
▢ 2 tablespoons Red wine vinegar
▢ 1 tablespoon Swerve Brown (brown sugar substitute, can use regular brown sugar if not cutting carbs / sugar)
▢ 1 tablespoon Stone ground mustard. Heat in a pan and whisk vigorously to emulsify.
