If you're planning to delve into the mystical art of mole (mo-lay) you need Mexican chocolate, Mexican vanilla, and decent Agave nectar.
 
I was going to try and make my own mole once. I saw the ingredients and took a pass. Most of the seasonings are not available to me in Maryland.
I buy a jar of mole from the grocery store, it's okay. I can't make everything from scratch I guess.

I actually don't care for mole.
To make it would be a ras el hanout of the seasonings that were listed by everyone.
