Well everyone, I’m feeling more and more like Tday food now. So I picked up a small roasting chicken yesterday , spatchcocked it, and seasoned with SPG, rosemary, and thyme. Onto the Zgrill it went at 275 until chicken heaven was reached at 160 IT. It was moist and super flavorful.
But something was missing and I remedied that today- jalapeño cranberry sauce. I took a bag of cranberries and heated them up with water, OJ, sugar, a few cinnamon sticks, and diced jalapeño. Cooled it down and it was a wonderful addition to the chicken. A touch sweet and could have used more heat but next time I’ll m
nail it.
