Long time, no post. Glad to be back.
I have typically smoked baby backs. We like them a little closer to fall off the bone, and I wrap in foil. They typically take 5-6 hours of cook time, running between 225*-250* pit temp.
I have some St Louis cut spareribs from Costco. 3 pack has a weight of 9.8lbs, for reference.
How will these cook different than my typically baby back cooks? Longer time?
