Spares vs Baby Backs - Difference in Cook?

Good Morning

Long time, no post. Glad to be back.

I have typically smoked baby backs. We like them a little closer to fall off the bone, and I wrap in foil. They typically take 5-6 hours of cook time, running between 225*-250* pit temp.

I have some St Louis cut spareribs from Costco. 3 pack has a weight of 9.8lbs, for reference.

How will these cook different than my typically baby back cooks? Longer time?

Just the opposite for me,I usually do St.Louis.They take about 6 at 225 on my MES.I also wrap.
 
Are ribs quite pricey at your Costco as well?

I like going there for meat but I almost never buy pork there because of the price.
 
I smoke mainly Spares, because the BabyBacks are much too expensive around here.
Spares take Me an hour longer than BabyBacks, mainly because I don't trim them into St Louis---I've found leaving them untrimmed gets me much more moist, delicious Ribs.

When I can find them untrimmed I also don't trim for the same reason.

Not overly more expensive, but not any cheaper either.
