Had two large racks of Spares just wanting to be Smoked
So I fired up my Smoker and let it start warming up.
Got the ribs out, removed the membrane, trimmed em up, and a good heavy coating of rub.
Fried up a little bacon, sauteed a chopped small onion and and a couple of jalapenos.
dumped my pork & beans in a foil pan, mixed in my bacon , onion and jalapenos , added
some brown sugar, Tony's, garlic powder and BBQ sauce.
Got the Ribs and Beans on the smoker.
Smoking at 225 -240 With Pecan
Used the 3-2-1 method actually 3 -2- 1/2
Made a little Cole Slaw too.
Ready about 5'ish , Called the neighbors and we dove in

Looks awesome! Not sure if I'm more jealous of the food coming out of your smoker or the fact your garden is growing! Ours seems to have a white blanket over it from over the weekend
