Got my new WSM, got some upgrades for it, now it’s time to smoke some spareribs. I kept things simple, one rack has mustard as a base followed by salt and pepper, second rack, worshiresaure as a base with salt and pepper. Keeping the temp at 225 using the BBQ Guru.

The choice of wood in this smoke: hickory chunks and cherry pellets.

Upgrades for my WSM include: River Country thermometer. Stainless Steel access door, and a BBQ Guru. Well worth the investment.

Nice BbQ there .. point to you .. make another post with it plated and sides ... we love that around here ....

Thanks griz400. It was a fun smoke. Still learning about how the WSM handles heat and smoke ( wood chunks)

Great looking meal, can't beat ribs & beans!
You may want to stick to the wood chunks, the pellets just burn right up.

I was wondering about that Al. I bought a big bag of it too! Well, live and learn I guess.
