So I butchered 2 hogs a week ago and i tried some new recipes on my bacons and hams and i am getting really bored waiting too smoke and try everything. So i was at the grocery last night and saw a special on spare ribs and figured since my b day is on monday I would smoke some ribs. I havent done any ribs in awhile we'll see how it goes.

Thank you sir picked up 2 of them. Our local grocery is tied in with our local butcher shop an their meat department is pretty good.
 
I agree...nice looking!

I usually trim them up St. Louis-style. I'll smoke the trimmings for snacking or pulling. If I pull, I'll put it between a couple of buns or freeze it for chili.
 
I was going to trim them but we had a bday party last night an I dozed off on the couch for a bit when we got home. So I just decided to pull membrane and cut em in half so they fit in my MES.

Results are in pretty good if I do say so myself. Had one rack that should have stayed in longer but it still wasnt bad just a little more tooth to it.
