Southwest style "Eggs Benedict"

Home is Glendale, AZ.
After church today we hit a local popular eating place. One of their breakfast specials was "Southwest Style Eggs Benedict" and when she explained what it was I said, that's for me!

Two nice soft poached eggs on top of a biscuit but between that biscuit and the eggs was several pieces of thinly sliced very tender smoked brisket and then the entire thing was covered with Jalapeno Gravy!

Wow, it had some real nice heat from that gravy but the taste of the smoked brisket still came through to make a wonderful mix of flavors. My wife ordered a BLT, tasted mine and said, WOW, that is something you have to make!

Never would have imagined this would be so good

Awesome. I make a quasi-huevos rancheros and employ left over brisket. Corn tortillas, topped with over easy eggs, then homemade enchilada/chili sauce then topped with some cheese and diced onion or pico. It makes a great breakfast meat. And lunch meat. And dinner meat. And snack meat. Brisket doesn't last long in my house and I am the only one that eats it for the most part! 
 
Wow AZBH, that sounds AWESOME!  I had a restaurant breakfast recently called Southwest Eggs Benedict but it put smoked ham and grilled poblano peppers on corn tortillas then covered the poached eggs with jalapeno hollandaise.  I like the brisket idea WAY better.
