Thought I would go ahead and post how this turned out. Thanks to all for the help. Pretty tasty. Did some roasted butternut squash and yellow potato to go with. This will make some good roast beef sammies.

You did a naked sous vide without a sear?
Got a tri-tip brining and thinking about sous vide finishing part of it.
Any tips you learned Brian?

Do it. I love SV, especially for beef. Tried chicken, jury is out on that still. Might have been me, as it was early in my SV journey.
 
That beef looks killer Brian. Very nice work. SV definitely has its place in the kitchen and yours is a great example of that.

Thanks John. I used my butane torch after cook but need to get a weed torch. For this cut SmokinEdge SmokinEdge recommendation worked good. I ended up going 30 hours at 131. If using a torch again really need a weed torch.

Thanks. I seasoned with Meat Church vacuumed and let go 24 hours. Did 131 in sous vide for 30 hours,

Thanks Eric. Thanks for the time recommendation. Going to slice on meat slicer and do French Dip today. Planned on yesterday but spent to much time at friends hooking up a AVR for him.

Thanks David. I got nice pile of shaved meat. Did a french Dip. Sammy good but that juice was no good. Took left over juice and added a can of Campbell's Beef Consommé. Bought a 12 pack of that stuff and it just not good!
