Well after 2 weeks of rain, a friend of a friend texted me to inform me that the Chanterelle mushrooms are flushing like crazy. I have been wanting to go with him to learn how to find them. So we went. I have never seen so many edible mushrooms in one place. They were everywhere! Ray Charles could have found mushrooms in those woods!! LOL!! I love oyster mushrooms, but these chanterelles are even better! Definitely my new favorite mushroom!

My cousin was in town, and my Aunt had just returned from Italy so a big dinner night was planned.
Appetizer was a bresaola salad with a lemon and Olive oil vinaigrette; balsamic drizzle finish.
Dinner: Sous Vide Double seared venison backstrap with a Steak Diane style pan sauce, Sauteed Chanterelle mushrooms with onion in butter, Roasted brussel sprouts with tasso, feta cheese, caramelized onions and honey drizzle....
If you have never had chanterelle mushrooms, they are delicious! They smell fruity raw like apricot, and once sauteed, they taste kind of like hazlenut or cashew.....really good!! My new favorite mushroom!! Now I know why they go for around $30/#!!
