Wanted to mix it up a bit and SWMBO loves cheesebread (me, not so much but hey, we do what we must, right :emoji_wink: so I use my go-to sourdough recipe plus 200gm of old cheddar and end up with

I used a mix of 1/4" and 3/8" chunks. The smalls melted totally, the 3/8" mostly melted so next time it'll be all 1/2" chunks.

Nice! Thanks for the report on the chunk size. My last sourdough run was a cheddar, jalapeno, sun dried tomato and the cheese all but disappeared. Good bread, but shredded cheese just became an indiscernible part of it. Gonna switch to chunks next time and pickled jalapenos, the fresh were good but not remarkable.

Looks very good.

My wife requested cinnamon bread. She toasts a slice every morning.
I haven't made a sweet version of sourdough yet. gonna have to try something in that lane someday.

I haven't made a true sourdough in months.
My starter is so ripe and pungent with lactic acid that a discard blend adds the tang in a yeast based recipe
 
Great looking bread. I agree on cubing the cheese. Made Guinness cheese bread last week and shredded the cheese. It mostly go absorbed. Some flavor just not what I was looking for.
