when checking thermometer in boiling water reads 212 you can trust. it correct. also should you set smoker probe on a block of wood or something so it doesnt touch metal. thanks again

Well being in Colorado Springs you may want to check the altitude adjustment for temp of boiling water.   I believe 212 is at sealevel.  I don't know how much a difference it makes.  As far as the probe in the smoke chamber you just don't want it sitting on the hot grates,  it is best at food level

Also you could try putting the probe in cold water with ice and it should read around 32 degrees.

You have to adjust boiling point to elevation.  I'm at 4500' on this side of the mountain, so the boiling points here is something like 104.4° (not exact, but close).  You can use a potato or a block of wood to keep the probe off the grates.  Hope this helps.

About 2* per 1000Ft elevation so 104*F at about 56,000Ft...almost twice Mt Everest!...

...I'm thinking Typo!....  204*F would be about right for 4500Ft...
