So I was driving around last weekend and saw a new BBQ place set up in the parking lot of a local grocery store - sign read Authentic Texas BBQ Pit Smoking. The guy had a large trailer pulled, wood fired rig, and it smelled great!

So skip ahead to this weekend, and I thought "Hey.... I'll stop there for lunch!". Pulled in, and first walked over to the smoker to check it out and talk to the cook. Nice guy and a nice smoker..... but!... my first clue of possible bad things - as I was talking with him he was squirting lighter fluid into the front corner of the cooking chamber closest to the fire box. Apperantly creating a hot spot to use for creating a sear on some of the meats. Oh... and the smoker was loaded with 4 briskets, 6 pork, butts, 3 tri-tips, and about a dozen chicken as he was doing this. I kept my mouth shut and decided to try the food anyway.

Walked over to the concesion trailer, and ordered a chopped brisket sandwich. Served open face on a nice soft roll, with a good squirt of his BBQ sauce. Sandwich looked really good, brisket had a nice bark and a good smoke ring, sauce was a very nice consistancy. Then I took a bite.....

First thing I tasted was lighter fluid, followed by a semi-flavorless BBQ sauce..... *sigh*. It was sooo promising, only to be ruined by the lighter fluid flavor. The BBQ sauce I could have lived with, but the lighter fluid taste ruined it for me.
 
and i bet your gut told you not to try it? but hey should make you feel better to know you do bbq better than this guy with the big rig.
 
Exactly what I think every tme I go to a competition..

I have this same experience at every q restraunt I visit. I dont know if once you go to mass production if folks just get lazy or if there is some other reason.
 
LOL... sounds like your talking about Rio's Ribs? I never did try that place. This guy was over behind Washington Square in the Metzger neighborhood.

Speaking of Metzger there is a great Bavarian sausage place there. They sell all kinds of great German sausages. I usually buy a couple of them and grill them.... super tastey!
