I guess with the bypass switch, storing it in between smokes unplugged switched to the Mes controller side would be a safety feature incase someone just plugged it in a recepticle and turned it in to a permanently on runaway smoker. Not that it could happen but is something you have available.

One of mine had a bad controller originally, and I believe I got some crispy insulation at about 330°--340°.
