So, on Amazon today and looking at stuff and I see Pork Cal fat. In case you were like me and completely ignorant of this precious gold growing in pigs, its visceral fat (Internal fat). Supposed to be better for cooking and reported on the cooking channel, so called.

Anyway here it is on Amazon. It is $116.78 for 10 pounds and so called $11.68 a pound. Is this like they Wagyu of fat? I was astounded to see this and think how much money I have thrown away or rendered into cheap lard. :eek:

Am I missing something or this just the new stupid people money trap?
 
So Caul fat is specifically the fat from around the organs, it resembles a tattered fishing net when held up. It's really just a membrance found around internal organs.

So I can actually believe the price; it's not some thing to put in sausage, it's used in AmerInd cooking to wrap other things, so they sort of baste as they are cooked over an open flame. I haven't had it, only know how it's used, like it's also used in Traditional Faggots(See UK Cookery). Honestly don't think I'd spend the money unless I was going hardcore traditional :)

I’ve seen them cook elk heart in caul fat over an open fire, on Meateater. I couldn’t have explained it better than TomknollRFV, and also think I’d spend my money elsewhere.

I was infact thinking of both MeatEater and Bizarre Foods! They show on Bizarre foods how Navajo use it, and of course, Faggots and peas.

I love both of those shows. Meateater is the ultimate show to me, highlites two of the things I love the most. Hunting and cooking.
 
When I was training for my meatcutting, they called that internal fat "suet"
Suet is different then Caul Fat.

Caul fat is an actual membrane around internal organs where as Suet is hard fat found around the kidneys and loins. Caul fat literally looks like a ratty fish net.

I use caul fat on my dry cure. You can use it for many sausage items. Thats pretty steep for a pound. I get a pound for like $5 down in S,FL.....GL

I've never seen it used in any way -but- wrapping meat. Some one using it for any thing else is news to me!
 
OK, that makes perfect sense.

I've seen it when butchering, just didn't know what it was....
I am also going to guess the taste is different then normal fat, but I'm not sure. I mean Andrew Zimmerman said it's a bit like charred fat off a pot roast or some thing, the stuff people love to eat crunchy goodness. But he also will eat and enjoy any thing some one took time to make. So. :P
