So a few weeks back Aldi had pork belly on sale for @2.99 a lb... I see now why it was so cheap...

It was nothing but fat... It spent 2-3 weeks under SmokinEdge SmokinEdge dry cure to turn it into bacon...

I didn't get a chance to cold smoke it so I jus sliced it up today...

This is what the slices look like... A little bit of meat on the top edge and then nothing but fat for the rest of the slice... So when stacked up that meat on the top edge makes the stack look good...

Nice work Keith, it will still taste good, and you may be surprised at the flavor and texture of that fat, it will be better than your used to. Still crappy you got a slab like that but again the flavor will be good. Stay safe down there.

I have a bunch like it from the same source. Some of the slices are pure fat with no meat at all.
 
Looks good, I got some from aldi's also a month or so ago, made some bacon. It was also mostly fat but it does taste good.
 
Wrap everything with it and grill smoke or roast, not everything has to be perfect to end up perfect.

Cook it in the oven on a sheet pan . Save the rendered fat ( nice and clean ) and eat the bacon .
I use 350 for a temp . Rotate the pan as it cooks .
