Continuing my quest towards a perfect brisket.  Brisket was a little under 9 pounds after trimming.  Used a store bought rub that I was a little unsure of, I was afraid it would overpower the meat.  In hindsight, probably should have been a bit more generous with the rub.  On the smoker at 6:30 and wrapped at 11:30.  By 1:30 was done and off to rest for several hours as it got done a bit quicker than anticipated.  All in all tasted pretty good, very tender.  Satisfied with it........but perfection has yet to be achieved.






 
Looks great. I've yet to tackle my first brisket but it's gonna happen soon. I've got a beauty in the freezer just waiting for me to take the leap.
