It's not as sweet as regular sugar , but helps with browning . I also have corn syrup solids .

No need to be sorry .
David they are just different types of sugars with various levels of sweetness .
They help with different things in sausage . Color , binding , feeding starter cultures in fermented products . Other stuff as well . I basically stocked my pantry with things I saw on Poli's site so I had them on hand .
