I knew I had a gift coming, but wasn't expecting a brisket! 10lb'er trimmed. I guess I'll be cleaning the pellet grill tomorrow as my freezer is packed to the limit already!
This will be my third brisket and I can't remember what wood I used before. Probably mesquite or hickory. Fortunately I have a full shed of practically every Lumberjack wood type. Any suggestions on what wood or wood combinations I should use for this one?
