Just found this website, so here goes my first post. Second batch of snack sticks going on the smoker tonight. Jalapeno/cherry/cheddar. First batch was cherry/cheddar. Anyone have any different recipes they care to share? I was thinking of some type of apple/brie cheese, Mediterranean sticks, or Hawaiian.

Here’s what I put on mine. I skipped the teriyaki this time and used a super good marinade from my local butcher shop that’s sweet and tangy. It takes. Lot of jalapenos to get heat. U really need to add some habaneros. Last batch I used 30 pounds of meat and 6 pounds of jalapeno and there was only a very light hint of heat. I put it seeds and all, I make 50 pounds at a time, going to make chicken pepperoni next couple days for the first time , also when u use a lot of peppers like me u don’t need to add water to the mix, I actually have to put it in the fridge to let it tack up for several hours peppers are like 92% water

This is the recipe I use. This dude is an invaluable resource, by the way. Often I'll make these without the cheese. Sometimes I'll add mustard seed or dehydrated jalapeños. Excellent stuff. Good luck!

The recipe and final product in the video look amazing. But I have misgivings about the term "sausage closet."

No shortage of innuendos with this guy, but he makes some good looking stuff. Again, I can vouch for the recipe above. The only thing I do differently is use sheep casings. I also like to dry mine out a little more than he does.

N1971, Sorry ,I always cheat and buy snack stick spice kits from TSM, PS, Eldon Cutlip and Owens BBQ
Same here. All those spice jars and such take up too much room, easier to buy pre mix from the companies above. BTW Eldons has been around for long time, now owned by the employees, dont know if Eldon & Karen still are in the workings of it but I know they still do the Dakotah stuffer.
