Question for stick makers. Made some Bloody Mary sticks today. Wind/temps aren’t going to be favorable for next few days to be able to get sticks to temp. If I dry at about 130* for a bit, and then toss smoke to them for about 3 hrs, if I throw them in SV at 152* are the collagen casings going to absorb water and will I end up with a mushy product? Thanks . . .

I got nothing to add that hasn't been said... fridge and smoke when you can... Do not seal up in the fridge... let moisture escape (dry the casings)) ...
Yep they are uncovered, thanks .
 
If you dont mind pealing the casings off then yes SV them in the water, they (meat) will not get mushy, just makes the casing easier to peel.
Yup they come off like a sock.
