Smoking

I used to own a BBQ joint for 5 years doing over a million in sales a year. Sold it and it took about 3 years to have the desire to smoke again. I am planning on building a brick/rock/cement smoker.
I am planning on having a way to divert the flu so I can hot smoke and cold smoke.
I am looking forward to perusing the site to learn more about building my contraption.
