What was your sausage recipe? I'm in Austin, and am still trying to nail Lockhart and Elgin sausages. I'm always interested in a new take. Those look great!

Finally got around to editing and uploading the video from my first attempt at smoking the Texas Sausage I had made the day prior. }

60/40 pork to brisket.
I did a lot of research to figure out that Texas Sausage origins come for Czech settlers in central TX area...I ordered Sausage from a couple sausage makers in that region, but it just wasn't quite right.
Found a company that sells spice packs pre-made. Nailed it. Was Exactly what I was after. Kicked it up a notch with dried jalapeño and habenero high temp cheese.

We had a (Texas) Czech butcher shop in our front yard and I've stuffed a lot of sausage there. We used 2/3 beef to 1/3 pork. Our Polish sausage was 1/3 beef and 2/3 pork. Normally bull meat or brisket (that was before brisket got so popular) and pork scraps. Some of my best memories! My 'Czech sausage' has evolved into either chuck roast or brisket trimmings and pork belly. Now that you've wound me up, I will probably stuff a batch this weekend.
