Lactose intolerant?

I agreed to help a neighbor make some sausage from moose. No big plans, just using a mix I get for a natural food store nearby. Met with him today to make plans on grinding, stuffing and smoking and found out he is lactose intolerant. I have had good luck with powdered milk. What options have you had in this situation? Suggestion please.

Hi there and welcome!

It depends on how intolerant he is. I'm pretty lactose intolerant and I can get away with using Non Fat Dry Milk (NDFM) at the recommended ratio which I have down as 4.5gm of NDFM per pound of sausage.

Now to answer your question, the other option is to get some Soy Protein Isolate. The website nuts.com often has very good price for it compared to other places (https://nuts.com/cookingbaking/beans/soybeans/isolated-soy-protein-powder/1lb.html). I have bought plenty for working out and blending it with more expensive options. I believe I landed on 2.3% of the sausage weight though you can read people go up to 3% but I didn't like the texture change getting closer to 3% and landed on 2.3% being good.
If you have 10 pounds/160oz/4536gm of sausage meat then 2.3% = is 3.68oz/104gm. (Meat weight x .023 = soy protein isolate weight)

Grams are easier math but you get the idea.

There is also a carrot binder out there and I think some people use potato starch as a binder but I have no useful info on how to use those.

Intolerant or allergy ?
If he's just intolerant , I doubt the amount of NFDM used in sausage is going to upset his stomach .

I don't know anybody that's more lactose intolerant than me,I'm getting to old to take chances at this point especially after nothing more than a carrot stick run some blue cheese did me for a night.

There's certainly a few options out there. I can't find affordable NFDM in my neck of the woods so I use Soy Protein Isolate like others have suggested.

Granted, I don't use it very often since you can get a very good bind without binders as long as you get good protein extraction.

I also have dairy issues, though not as extreme as some. A previous co-worker couldn't even handle a sip of coffee with a splash of cream in it. It made her ill.
