Well I wanted to do a brisket this week while I was off but found out my week is pretty much full due to the kids Christmas programs and Church.  So I decided to smoke some ribs.  They have been on for a bout two hours now.  Looking good.

They look tasty! What did you rub them with? What type of wood did you use?

I used pecan wood and rubbed them with emerils rib rub since the ingredients are similar to the rub I normally make. The flavor was really good. They were a little on the sweet side though but still tasted great.

I love pecan, never tried his rub. His kickin chicken seasoning is alright.

It's not bad. It doesn't have a real bold flavor though. This was the first time I had used it but it wasn't that bad. Yeah pecan is awesome to smoke over. I love it.
