I'm a first timer, I tried jerky last weekend and screwed up royally.  I'm doing ribs tomorrow been marinating since last night.  Any advice should I use the 3-2-1 method?

I would start with the 3-2-1 method. It will serve you good. Then you can adjust it to your liking.

No need to smoke while wrapped in foil, save your wood.
When you get a minute would you stop by "Roll Call" and introduce yourself so we can give you a big SMF Welcome, Thanks!

they won't take any smoke while in foil-so hour 2 and 3-and if you want the last hour.I never introduce smoke when I first put the meat in-that's just me though.

Are they spare ribs?  If so, yes 3-2-1 is good rule.  If they are baby-back ribs, the rule is 2-2-1.  Either way, I usually apply smoke during the first and the last stage, with no need for smoke while they are in the foil.  Good luck, and remember we all like to see qview! (pics)

What he said. There are several ways to get ribs cooked extremely well. That 3-2-1 or 2-2-1 is an excellent starting point.

How'd you mess up your Jerky?

The ribs turned out great had about a 1/8 " smoke ring on them thanks for all the advice!

My heat was too high on the jerky, I'm going to try again tomorrow I just hope I get the heat down. My smoker doesn't like going below 200 so I'm going to have to babysit it quite a bit.  I think it is going to be pretty hard on beer lol. Any suggestions on methods to get my heat down?

The guys are right on Schooner, as long as you are smoking those ribs between 225 and 240.  Any higher than that and you take a chance of overcooking.

Good luck and...I WANNA SEE SOME Q-VIEW!!!
