I was wanting to smoke a pork shoulder on a grate on my fire pit. The coals would be below. Wasn’t sure if I should put directly on grate or in aluminum pan for drippings? My plan was going to cover meat with a turkey aluminum pan to capture the smoke.
Could I put shoulder in aluminum pan and cover with aluminum pan? Thoughts

Little more detail on your pit. Adjustable grate height. Any walls around the pit? These kind of details. Also what exactly is the fuel source? Wood, charcoal, or briquettes?

That is going to take forever you would be much better off butterflying the butt to cut down on the cooking time.

Below is my setup. 2 or 3 different type Adjustable grates. Not all shown. The total height for grates are 28-32” high. I was going to use wood for smoking. If I used the grate only. Wasn’t sure how to catch the dripping without going in fire.
