Tarponjack, welcome to SMF! Glad you are here and looking for answers. I don't have a Char-Grill smoker, but plenty of folks do. You'll get it figured out quickly.
I have two of them. You have to babysit them. All about the vents. And make sure to buy a good probe thermo for it. The thermos on the smoker itself are garbage and inaccurate as can be.
