New to smoking. The first time was a total disaster. Meat was dry and tough. I am finding it VERY hard to control the temperature in my Char-Grill smoker. Hopefully with the help from this forum I'll learn

Tarponjack, welcome to SMF!  Glad you are here and looking for answers.  I don't have a Char-Grill smoker, but plenty of folks do.  You'll get it figured out quickly.

I have two of them. You have to babysit them. All about the vents. And make sure to buy a good probe thermo for it. The thermos on the smoker itself are garbage and inaccurate as can be.
