I'm part of a facebook woodworking forum and saw an interest post today. One of the woodworker's had questions about a project for a meat press you'd leave in the smoker, their friend saw it in a book and asked for one. What technique is this? Or does it have a certain name? Anyone here heard of it/the book being referenced? I'm super curious, so curious I just signed up to ask!



I'm always personally curious about smoking meat, I'm a big fan of grilling :). Thanks guys! Reference pic attached.

I've seen presses for Dry Cured Sausages and meats like German Landjaeger and Italian Speck. There does not seem like smoke could contact the meat between the boards...JJ

Thanks for the reply :) I'll look into it. And yeah, the smoke contact issue has been raised, too, it's a very curious thing.
