Smoking in the NC mountians

I'm new to the smoking game but in the few short months I've been doing it, I love it ! I started by building a cold/hot smokehouse I saw on one of our favorite TV programs. Now I also have a Masterbuilt 30 to help with fine tuning my recipes. I'm an avid hunter and fisher with a love for the outdoors. Thanks to all on this forum for the information and advise. I tried attaching a picture of my smokehouse a few days before I finished it. Not sure if I did it right.
