Hello all:

 While I'm not particularly new to smoking meats, I recently built a smoker of my own and am trying to get the kinks out. 

In the past I have smoked countless turkeys, ducks and chickens, and also some Boston Butt on a Weber smoker. I decided it was too small for my needs and thus built my own with a larger capacity. A while back I built a ceramic smoker out of a huge flower pot that worked fairly well but still wasn't large enough.

My intention is to use oak wood instead of charcoal and chips. I have plenty of oak here that I can use.

Once I get the kinks worked out with this smoker and my technique, I'll branch out and am very interested in finding and sharing recipes.
