Last week I smoked a pork shoulder, which was the first thing I had smoked in several years and remembered how much fun it was!!  So luckily I also have a free day this week end so I decided to smoke a fresh ham roast.  I chose the roast because in September we got a whole hog (small butcher) and my buddy called me last week and told me that he needed to get rid of some "big butcher hogs" and I would have a half waiting at the local locker, so I need room!!!  Anyway I am firing up the smoker tomorrow  with a high of 27 and a low of 8 so I am pretty sure my temp will not get out of control LOL!!!  I promise I will post some pics tomorrow!!!
 
Gonna be watching this one.
