I am gonna smoke a couple of 3lb boneless turkeys, a 3lb tri tip, and a 10lb ham at same time. I am using a regular old brinkmann charcoal smoker or "ECB" I imagine I would have to pu the ham in first but what I'm trying to figure out is would it be better to put it on the top rack and the rest on the bottom or the other way around. Any other tips would be greatly appreciated
 
Always put poultry on the bottom to avoid contamination.
