Last one took way longer than I planned, so this was on the smoker 6:30am with SPOG @275+ with post oak and mesquite. Neighborhood BBQ later. Guy across the street makes fantastic ribs.

Here's a pic @160 before I wrapped it. It was about 4lbs+. I'll grill some onions, and have a bunch of slider size rolls.

This may sit in the cooler for a while. But I thought the same thing last time.

I was planning to do a packer but didn't have time to hunt one down.

Looks good. I am doing a brisket been on 4.5 hours wrapped it at 165 with paper, it has hit the stall at 177
 
This was a grand slam homer. Once it hit 200, it had that jello feel.

It took 11 hours @275, it was finished just in time to rest a bit before we all dived in.
