oh, one other thing; white oak worked really well with this cook. I usually only use oak on brisket.

Yeah, for whatever reason I only think of using oak on beef. Kind of like I only use hickory on pork. :dunno
My friend in smoke, you need to try some cherry or apple with that pork! Those will make you drool
