Hey all,

Florida born and raised. Currently living just outside of downtown St Pete. Love it!

Just received a 30" MasterBuilt for xmas. Yesterday I smoked a 3.5 lb whole chicken and some sausages with apple wood. Was great! I did it in a rush as I am still moving into a new home, so no brine and I forgot to pick up a thermometer. So I just overshot the mark a little to be safe. Everything came out delicious, but there is room to improve. I can say that it was at least better than a chain restaurant! I have a pork butt, and a turkey breast in the freezer that will be my next projects.

Welcome to the forums!  You've found the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks here who really enjoy helping one another.  Looking forward to your input here, and just ask when you need anything...someone here will surely have the answer.
