The mustard layer.


Rub dem butts! I used a mixture of blues hog rub with additional brown sugar/cayenne.


Wrapped and ready for the fridge.


The left butt took about 9.5 hours and the one on the right took about 11.5.


The finished product. I used SoFlaQuer's finishing sauce with a few squirts of sweet baby rays.


The coworkers loved it.

I would like to thank everyone on the forum for providing so much information. I did purchase the MAVERICK ET-732 and AMNPS earlier this week and these two items helped so much.

The ET-732 is telling me that my MES 40 is 25 degrees lower than the digital readout. My first smoke took about 17 hours at 200(MES told me that I was 225). This time it only took 11.5 hours for two butts at 225.

I loaded the AMNPS twice during the smoking process due to the fact that I lit both ends for double the smoke(gave me around 5-6 hours with tons of TBS for each load).

I may try my hand at ribs tonight/tomorrow. Thanks again!
