Smokes Rolling in Central Florida

So this is my first smoke on Big Tex, thought I would do a Pork Butt since they're fairly easy. I rubbed her down last night with some of Jeffs Rub last night(which I've never tried). I've been itching all week to fire her up since bringing her home on Tuesday. I'll keep ya'll posted on the progress.

So everything seems to be going smooth, my temps have been holding pretty steady. I was thinking I would have a hard time maintaining temp but I am pleasantly happy with how it's doing.

Turned out pretty good if I do say so myself. Could have let it rest a little longer but our mouths were watering.
