Hi guys! merry christmas!
first time poster, been smoking for 2 years mostly turkeys. i am doing brisket for the 3rd time. I put my prime cut usda 8 lbs on at 11pm. 225degrees. At 2am temp was 150, i went to bed,overslept and woke at 7:45am. smoke was out, meat was 67. i fired it back up, to 225 and it is moving back towards 100. any thoughts?
