Hi I live in Orange County.

Weber 22.5" Gold One Touch

Hoping to make Texas Brisket this weekend. Any suggestions on where to get a "Packer" and injection tips?

Tried making so far:

1. beer can chicken

2. boston butt

3. pork ribs
 
You can get an injection set from just about any Home Depot, Smart Final or dedicated BBQ store.  As far as a packer you can get a full brisket from Smart and Final, or Restaurant Depot in Fountain Valley and some Costco's carry them, but call first.

Do you have a place to put your chips for smoking?  I would also try and stack the coals on 1 side and put the brisket on the other since your not using a smoker and won't have a drip pan.

Smart and Final has good packers. I just picked up some flat's from sam's but at about $2 more per pound than the packers from S&F.

Oh, I always browse at Chef's Toys in Fountain Valley, but never been to the RD store. I wish I had a license! do you find it worthwhile shopping there compared to other places?

I just use the indirect minion method on the weber and add some wood chunks to the chimney starter. I can stick a drip pan on the cool side away from the coals to catch the drippings.

I'll post some pics if I get a chance to make the packer this weekend now I know where to get one.

RD is hit and miss.  They always have sub-primal cuts if you like to age beef and large cuts for brisket, but the prices are not really lower.  They just have cuts and things that most places won't carry so it's just a matter of convenience.
