I'll be smoking 3 breasts for thanksgiving but I'm going to do one before then ( just to practice) .....what is the ideal internal temp , and what is a good cooking temp thanks
 
I will usually smoke a whole bird until it reaches 165° and I keep my smoker at 225°. I cannot say how long it will take but this is what I do.

Steve - make sure you brine the breast.  I use around a gallon of water, cup of pickling salt, and handful of brown sugar.  I cook at around 240 give or take 10 degrees.
