I don't post very often, usually so busy getting everything prepared. Decided to make a conscious effort to take pics. Tried Jeff's Coffee Brine recipe, and I have to say I'll be doing it again in the future.

Here is the Tri-Tip after marinating 3hrs. Also smoked some Russet & Sweet potatoes.

Coated these guys with V.O. and sprinkled them with salt and ground pepper. Smoked them at 225 for 2 hrs. The Tri-Tip temp when pulled was 140.

Put some compound butter on top while it rested.

Finished product. Tri-Tip came out so tender, and nice medium rare.
 
Wow! That looks awesome, but how in the world did you get russets done in two hours at that temp? Mine always take at least 4.
